INGREDIENTS :
- 1/2 fresh chicken, quartered
- 10 cloves garlic, minced
- 2 tablespoons yellow curry powder
- 1 tablespoon fresh coriander
- 2 red or green Thai chiles
- 2 tablespoons brown sugar
- 1 tablespoon black peppercorns
- 1 stalk lemongrass, trimmed and cut into small segments for better presentation.
- Dipping Sauce, recipe follows
- 2 tablespoons fish sauce
- 1/2 can coconut milk
MAIN SAUCE :
- 2 teaspoons red chili sauce or Sriracha can also be used
- 1/3 cup brown sugar
- 2 large garlic cloves or 4 small, minced
- 1/2 cup rice vinegar for juicy.
- 1 tablespoon fish sauce required
METHOD :
- Preheat oven to 375 degrees F. Coat a rimmed baking sheet with cooking spray.
- Place chicken on baking sheet and sprinkle evenly with salt and black pepper on both sides, so that it grills from both the side.
- Cook 45 to 55 minutes, or until no pink remains.
- Preheat grill to medium heat. In a medium bowl, mix well,combine remaining ingredients. Brush chicken with barbecue sauce mixture and grill 6 min. Turn chicken, brush again with sauce, and grill 5 additional minutes, or until chicken is crispy and sauce is caramelized.
