INGREDIENTS :
- 1 tbsp. honey
- 1 large free-range egg
- 1/2 cup soft light brown sugar
- 1/2 cup quick cook oats
- 2 medium-large bananas, mashed
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 2/3 cup all purpose flour
- 1/2 cup wholegrain spelt flour
- 1/2 tsp. baking powder
- 1/2 cup coconut milk
- Pre heat oven to 360 F..
- Cream together the coconut egg, sugar, milk, honey, cinnamon and salt
- Throw in the flours, oats and baking powder and mix until just combined.
- Stir in the mashed banana and spoon into a greased mini loaf pan and bake for 30 – 35 minutes.
