Pomegranate With Kiwi Salad

INGREDIENTS : 

  • Iceberg lettuce leaves 8-10
  • For Dressing
  • Mustard seeds 1 teaspoon
  • Black pepper powder to taste
  • Romaine lettuce leaves 5-7
  • Extra virgin olive oil 2 tablespoons
  • Small cheese (paneer) 50 grams
  • Garlic cloves 5-7
  • Kiwis 2 medium
  • Fresh mint leaves 8-10
  • Orange squash 1 tablespoon
  • Juice of ½ lemon
  • Fresh pomegranate kernels 1/4 cup
  • Salt to taste
  • Lolo rosso lettuce leaves 5-7

METHODS : 

Step 1 : Peel and roughly chop kiwis and put into a bowl.

Step 2 : Roughly tear all the lettuce leaves and add to the bowl.

Step 3 : To make dressing, grind together garlic, mustard seeds, mint leaves, orange squash, lemon juice, extra virgin olive oil, salt and pepper powder till smooth.

Step 4 : Roughly crumble cottage cheese and add to the bowl with pomegranate kernels and dressing and mix well.

Step 5 : Transfer the salad onto a serving plate and serve immediately
