INGREDIENTS
- 1 1/2 tbsp. mustard
- 6-8 ounces roasted chicken, de-boned and skin removed; diced
- 1/2 cup cheddar cheese (optional)
- 1 tbsp. honey
- 2 (your choice) Lettuce leaves
- 2 tbsp. mayonnaise
- 1/2 cup diced tomatoes
- 1/2 cup diced white onions
- 1 lemon, cut in half
- 2 pita pockets
- Salt and pepper to taste
INSTRUCTIONS
- Combine diced tomatoes and white onions, squeeze out the lemon and toss. Lemon can give a great neutralizer to the strong taste of white onions. Put a little bit of salt and pepper then set aside.
- To make the sauce: Combine mayonnaise, mustard honey until the color gets even and set aside. You may also want to put lemon zest by grating lemon skin to the sauce to give a little alternative to its standard sweet taste.
- Heat the pita pocket until it becomes warm. If you also prefer, you may also heat the roasted chicken until almost hot
- Assemble the sandwich; First place romaine lettuce, followed by the tomato and onions. Next, put the chicken and sauce. You may also want to put cheese to give its creamy and added sweet taste.
- Wrap the sandwich not so tight, so as not to ooze out the fillings, nor should it be too loose to not hold the fillings together.
