A special Mexican Breakfast recipe from Chef : Aiye Bubis
INGREDIENTS:-
- 1 Red Bell Pepper
- 2 tsp Olive Oil
- 4 (1/2-inch-thick) slices of red onion
- 1/8 tsp of kosher salt
- 1 (12-ounce) eggplant, cut into thick slices
- 4 whole-grain flatbreads (such as Flatout Light)
- 1/4 cup chopped fresh flat-leaf parsley
- 1 container plain hummus
- 1/2 cup crumbled feta cheese
INSTRUCTIONS :-
- Take a grill pan and heat it for next 3min.
- Now, Brush Onion, Bell Pepper and eggplant with 1 tsp of Olive Oil.
- Now put Bell Pepper and Onion into the pan and cook it for next 3min on each side.
- Put add eggplant to pan & cook for 3min or untill grill marks appear.
- After chopping vegetables, with 1 tsp Olive Oil, Salt, Parsley and toss the mixture.
- Put 1/4 cup of hummus over each flat board.
- Put vegetable over flat bread and roll it, and paste some tsp cheese on side of it.
- Roll up theflat bread wraps, and cut diagonally in half or as per your mouth edge.
- Ready to serve
IMP NOTE : You can present your dish in any way, If you want another chocolate flavour to be displayed in presentation, still that would work.
